Almost one year ago I was in Portland by myself for a few days and ate breakfast at Starbucks each morning. I had my huge Chai Tea and a Greek Yogurt Parfait.

As I sat scarfing down enjoying my breakfast I thought to myself, ” I could make this and for a lot less money.” I like to do that. Make something rather than purchase it. Food. Not clothing. I can’t sew. Or crafty things. Not a crafty person. Just food.

One of the things I liked about the parfait (once I figured it out) was that the granola wasn’t touching the yogurt so it remained crunchy.

Preferring my granola crunchy, I thought it wouldn’t be to hard to make in a canning jar with some plastic wrap.

When I finally returned home, I went to the store and bought some yogurt and berries. In my version I use frozen berries since they are readily available all year long.

I like making these in the half pint wide mouth canning jars. It just seems like the right size.

In the bottom of the jar I put 1/4 cup  berries,

followed by Fage Greek Yogurt almost to the top,

cover the yogurt with plastic wrap, and top with 1/4 cup of granola. In case you missed it, here is the recipe for granola that I make.

Since I use plain yogurt it isn’t really sweet. I like it that way. To increase the sweetness level you can either buy vanilla Greek yogurt or buy some of those sliced strawberries frozen in syrup. Let them thaw and pour some of the syrup in with the berries. When you mix it all up to eat, it will be a little sweeter.

Another thing I like about this is I can make a bunch up on the weekend, put them in the refrigerator and it makes for an quick breakfast on those hectic days during the week.

Ingredients
  

  • Plain Greek Yogurt
  • Granola
  • Frozen berries
  • Plastic Wrap
  • Mason jars wide mouth, 1/2 pint size

Instructions
 

  • In the bottom of the mason jar put 1/4 cup frozen fruit. Top that with Greek Yogurt to almost full. put a small piece of plastic wrap over the yogurt, top that with 1/4 cup of granola.
  • Put the lid and screw band on and store in refrigerator for up to five days.

 

With the weather warming a nice cold fruity breakfast sounds delightful.
