This Super Nacho makes a great appetizer or  dinner. It makes a great addition to a Super Bowl party too.

Super Nacho

Years ago…..ok, DECADES ago, during the summer between high school and college I worked two jobs. During the week I worked at Nordstrom in the Brass Plum. On the weekends, I worked at a restaurant called ” High Rocks Pub”. I was the hostess. It was really fun. Customers were great and I got free dinner.

Besides their awesome Halibut fish and chips, they were famous for their super nachos. All night long you would see these nachos coming out of the kitchen to a multitude of tables filled with hungry diners.

Summer ended and I was off to college. It was years before I ever thought of making them my self. Michael and I were married by then and I wanted to share the wonderfulness that is this super nacho.

They are quite easy to make and can feed a crowd.

I thought I would show you step by step how to make them. I’m a visual learner. Hopefully you are as well.

First you start with a layer of beans.

Then you add your taco meat.

Next comes the cheese.

At this point you put it in the oven to melt all that cheese.

Once the cheese is melted, top with diced tomatoes, guacamole, and sour cream. Surround the outside with shredded lettuce and serve. Make sure you have a big bowl of chips nearby.

I use a pizza pan purchased at a commercial restaurant supply store.  I know Cash and Carry also sells them.  They are under $10 each. You could also use dinner plates for each person. The beans and meat are hot when you layer them so the plate isn’t in the oven for long which means it shouldn’t be too hot.

Sadly, “High Rocks Pub” closed. I’m hoping it isn’t because of all the free mints I ate while hostessing. But their famous super nacho lives on in our house. My boys love them.

A great appetizer for a party or a fun dinner.

Ingredients
  

  • 1 15 ounce can Re-fried Beans
  • 1 4 ounce can roasted diced chilie peppers
  • 1 pound ground beef
  • Taco seasoning
  • 2 cups shredded cheddar cheese
  • Shredded lettuce
  • Diced tomatoes
  • Sour cream
  • Guacamole
  • Tortilla Chips

Instructions
 

  • Preheat oven to 350°
  • Empty the re-fried beans into a heat proof container. For more flavor and texture, add the diced chilies, some cheese and sriracha sauce. Heat in the microwave stirring occasionally.
  • While the beans are heating, cook up the ground beef adding the taco seasoning.
  • Once the beans are warm and the taco meat is cooked begin building the nacho.
  • Spread the beans first in a large circle, top with all of the meat mixture and then the rest of the cheese. Put in the oven until the cheese is melted.
  • Top with diced tomatoes, sour cream, and guacamole. Spread the shredded lettuce around the outside.

Notes

You can use canned refried beans or make your own. I like to make mine more flavorful by adding chilies and cheese before heating them up.
You can also add onions, sliced olives, sriracha sauce or anything else you like on your nacho.
You can also use different taco meat. Just make sure it is small enough to fit easily fit on a chip.
Make sure you have a lot of chips to scoop up the nacho.
