Stuffed Peppers

This recipe will make eight of the thinner Marconi Peppers or four Bell Peppers.

Ingredients
  

  • 3 tablespoons cooking oil
  • 1 cup chopped celery
  • 1 bell pepper chopped
  • 1 onion chopped
  • 1.25 lbs Italian Sausage
  • 3 garlic cloves minced
  • 4 ounces cream cheese
  • Tabasco to taste
  • Peppers cut in half

Method
 

  1. Preheat oven to 400 degrees.
  2. Add oil to a fry pan over medium heat.
  3. Saute celery, bell pepper and onion until soft.
  4. Add the sausage and the garlic. Cook, breaking up, until done.
  5. Remove from heat and stir in the cream cheese.
  6. Once thoroughly incorporated add tabasco.
  7. Stuff peppers with meat and cheese mixture.
  8. Bake for 15 to 20 minutes or until peppers have softened.
